Recipe: Sweet & Spicy Carrots

3 lbs. carrots, peeled
1/2 cup pure maple syrup
1/4 cup olive oil
2 garlic cloves, minced
2 tablespoons California chili powder
2 teaspoons cumin seeds
1 lemon, sliced
salt and pepper to taste

- Preheat oven to 425 degrees.
- Whisk together syrup, olive oil, garlic, chili powder and cumin seeds.
- Place carrots in a baking dish and coat with syrup mixture. Sprinkle with salt, pepper and lemon slices.
- Roast until carrots are cooked through, about 35 minutes.

Serves 10.
