If we had it our way, everyday would be Cinco de Mayo - we can never get enough of all of the incredible Mexican food California has to offer. One of our favorite recent discoveries was the Duck Chilaquiles at the recently opened Padrecito in San Francisco's Cole Valley. Chilaquiles are similar to nachos in that they're chip based, but since they are often topped with mole, eggs, cheese, beans, salsa, and guacamole, they tend to be served for brunch in the US. This version is very much a rich dinner dish, smothering the freshly made tortilla chips in duck carnitas, kale, fava beans, spring onions, chipotle mole, and a crema. The result is completely decadent and delicious.
