At the classic Hollywood restaurant Dan Tana's, Veal Milanese is listed as 'a la George Clooney'. Whether this is because the Argo Oscar nominee's Italian home in Lake Como is very close to Milan, or because this is truly his favorite dish, we don't know for sure, but it is delicious and simple to make. For those who are unaccustomed to eating veal, it is easy to cook, lighter than beef, and there are many humane suppliers who raise calves out in pasture now.
Ingredients:
4 6-ounce pieces of veal scallopini
1 cup all purpose flour
2 cups dry white breadcrumbs
2 eggs
Olive oil & butter
Parmesan cheese
salt and pepper to taste
2 lemons
Coat the scallopini in flour, then egg, then breadcrumbs. Heat the oil and butter in a large frying pan over medium heat, and place the coated scallopini in a single layer. Cook for about six minutes, turning once.
This should serve 4 - the dish pictured includes roasted Brussels sprouts and carrots, as well as a bed of arugula to serve the meat on, which we recommend. Season to taste, and serve with lemon wedges and Parmesan cheese.
